Can Google see my information?

I understand that the info in Google Sheets is encrypted during transmission to/from Google, but can Google see all of my info ?

The company has encryption keys for all the data stored on Google Drive. These keys allow Google to decrypt files, bypassing all the security regardless of your privacy settings.

Even if they can technically decrypt any files, my understanding is that they need a reason to actually do so (e.g. required by law) but I’m not an expert in interpreting their privacy policy.

We also offer an integration with Microsoft Excel where you can have the workbook stored locally on your machine (not in the cloud).
