Can I start and populate a second Excel foundation template and keep the first one active?

Yes. You can have up to five linked an active (Excel and / or Sheets).

I did the same thing (Google Sheets) to see what the Transactions would look like. Not that many in my case, but plenty of Balance History entries 
If you subscribe to the Hello Money daily email, then you could add the investment accounts to that to get something closer to Net Worth. You wouldn’t even need to link a spreadsheet for that.
Some people will just keep an investments sheet separate to avoid the Transactions mixing in with their primary data. And some will add them to their primary Tiller spreadsheet and flag those Transactions for manual deletion via AutoCat.
