Select columns and choose ‘Group’ from the ‘View’ menu.
Thanks for the quick answer @jpfieber but unfortunately for me that “obvious path” doesn’t work when they’re adjacent (as it auto merges groups).
Here are two GIF’s of it in action (using the “view” menu, and the right click one)
Ahh, you have to leave a blank column between them, which ends up falling below the ‘+’ so that’s where I put the labels for each group. In your top example, leave W blank for the label, and group T/U/V instead of U/V/W.
